Instant Pot Red Beans Recipe

Ingredients
- 1 Lb Dry Red Beans Soaked in water overnight, drained and rinsed
- 1 Large Onion, diced
- 2 Stalks Celery, diced
- 1/2 Green Bell Pepper, Diced
- 1 Large Jalepeno, diced seeded or not, personal preference
- 3 Cloves Garlic, minced
- 1-2 Tbsps Bacon Fal, or Oil
- 2-4 Smoked Ham Hocks number depend on how meaty you want your dish
- 5 cups Chicken Stock homemade if you have it
- 2 Bay Leaves
- 1-2 Tbsp Cajun Seasoning start with this and adjust seasoning at the ned
Instructions
- Using an 8 Quart Instant PotSet Instant Pot to Saute, High for 12 minutes
- Sweat onion, celery, pepper, jalepeno 3-4 minutes, add garlic and continue til onions are translucent
- Add hocks, beans, chicken stock, cajun seasoning and bay leavesBe certain that all is covered. If not add water, to cover
- Cancel Saute. Set Instant Pot to High Pressure for 40 minutes, nautral release at least 20 minutes. Check beans for doneness.
- Remove ham hocks, shred ham (remove large fatty bits, and skin and discard)Add back to pot, taste and adjust seasoningServe over rice, or cornbread.We like to make Jiffy brand cornbread, using 1 box honey and 1 box regular. Delicious and a little change of pace from rice.
