Taco Salad an Old Standby

Taco Salad, a recipe forgotten.
A few years ago, I saw the classic Doritos Taco flavored chips back on the grocery store shelves. I immediately grabbed two bags!

Since Doritos brought back the Taco flavored chips, grocery store brands have followed suit. If I don’t find the brand name, I use the store brand. You can’t tell the difference.

I grabbed all the ingredients for Taco Salad and made it the next day. The guys loved it! It is requested if not made it for a while. It doesn’t matter the time of year, but it is a great, go-to for an easy dinner, particularly in the summer.

I’m pretty certain the recipe appeared on the back of the Doritos bag. Mom made it, or would have one of us make it for dinner.

My siblings disagree on what salad dressing was used. It really doesn’t matter. It tastes good with any of them. I’ve used French, Catalina, Russian, Green Goddess, Thousand Island, tonight I’ll be using Chipotle Ranch. (CK looked at the bottle, “Don’t we have French?” He then, tried it, “This is pretty good!”) IT DOESN”T MATTER WHAT DRESSING, they all work.

I have to say, I’m partial to Wish Bone Dressing, but use what you have or your favorite. This is one of the few times, I buy non-refrigerated dressing.

Make your own dressing by combining your favorite salsa and sour cream. Or just use salsa.

What is so appealing about this recipe, is you can’t really mess it up.

Taco Salad

Ingredients

  • 1 head lettuce washed, chopped, dried
  • 1 pound ground beef
  • 1-2 tomatoes, depending on size chopped
  • 1 bunch green onions chopped
  • 1 can kidney beans drained and rinsed
  • 8 ounces cheddar cheese grated
  • 1 bottle salad dressing 15 ounce
  • 1 bag Taco flavored tortilla chips crushed

Instructions

  • Wash, chop and dry lettuce (I like using a salad spinner).  Chop tomatoes and green onions.
    Grate cheese.
    Drain and rinse kidney beans.
    Brown ground beef.  Drain grease.  Cool, either in the pan or if in hurry transfer to a plate and spread to cool.
    Combine lettuce, tomatoes, green onions, kidney beans, beef in bowl.  Toss to evenly distribute.*
    Add, crushed tortilla chips, , toss, add cheese, toss, add salad dressing and toss.
    Serve immediately.
  • *At this point, if you will not be needing the entire batch you can separate what you want and add the correct portion of chips, cheese and dressing. Saving the remainder for later. (I do this if I want to take it for lunch the next day).
