This little piggy when to market, this little piggy stayed home…Pulled Pork, the best little piggy that you can make and eat at home. So many ways.

I have made pulled pork using a smoker. I have made pulled pork on the grill. I have made pulled pork in the crock pot. I have made pulled pork in the instant pot. My favorite by far, that saves the most time, and gives excellent flavor is the instant pot!

I don’t need to remember to buy chips, soak them and then wait hours, remember to add coals to the fire. Stick the pan in the brown paper bag for an hour (I don’t know exactly how it works, but if you go old school, it does make it delicious! If you have the time.)

I don’t have to wait 8 hours for the crock pot. If I want to have pulled pork, have the ingredients and have only an hour and half to have dinner on the table, I have got it covered.

What I have learned, is when using the instant pot, in order to get a flavorful pulled pork, you need to add more flavor, either in seasoning ingredients and or spices.

I love that I can use the pulled pork for at least three different meals. Pulled pork sandwiches, pulled pork stuffed baked potato, pulled pork tacos…it also makes a mean breakfast taco addition. The possibilities!!!

Flavorful Pulled Pork

Sandwiches, stuffed potatoes, tacos, the variety of options!

Ingredients

  • 3.5-4 pounds Carnitas (pork butt, off the bone, in chunks)
  • 1 Red Onion, sliced
  • 1 3.7 oz can Chipotle in adobe sauce, chipotle chopped
  • 2 Fresh jalapenos, sliced
  • Salt and Pepper
  • 1 10 oz can Tomatoes & Green Chilies Rotel
  • 1/4-1/2 cup jalapeno juice, from pickled jalapenos
  • 1 cup chicken stock

Instructions

  • Put carnitas in instant pot.  Season with salt and pepper.  Add remaining ingredients, stir to combine.

  • Set instant pot to manual for 30 minutes.  Slow release for 15 minutes.
    Use 2 forks, to shred pork.  There will be excess liquid.  Use some of it to keep the pork moist when you store it.
