Temperatures are starting to rise. Texas summer has started and it is only the middle of May. Outdoor parties, pool season, what to bring to the party? Salad was the reply. We have nothing green, just lots of grilled stuff.
Salad. Hmmm. I don’t want to bring the oh so dull greens with tomatoes, carrots, green onion. Don’t get me wrong, I actually really like the usual salad. But – it’s not so party, now is it?
Something, cool and refreshing. Watermelon. It might be early in the season, but the watermelon in the store is pretty tasty right now.
Watermelon Salad
Ingredients
- Watermelon wedge
- Spring Mix
- Baby Spinach
- Balsamic Vinaigrette
- Blue Cheese crumbles
- Honey Roasted nuts
- Salt & Pepper
Instructions
- Cut watermelon in bite size pieces. Put in a container with lid. Store in fridge.When ready to serve:Mix spring mix and baby spinach in a large bowl, season lightly with salt and pepper, add balsamic vinaigrette dressing and toss to lightly coat.Place in serving dish. Top with watermelon pieces, scatter blue cheese and then nut pieces.Serve.
Did you notice I left out quantities? Intential.
How many people are you serving? Is it the main course, a side, I don’t know. For a party, I mixed 1/2 each, of the large prewashed containers of spring mix and spinach. For a girls lunch, if it’s the main course, I’d use a a handful of each, per person.
The key is to not overdress the salad greens. Pour in some dressing toss it around, and then if you need more, add a little at a time. Don’t drench it! The same goes with the watermelon, cheese and nuts. It’s a visual presentation. You could always have extra dishes on the side for those who want more of one ingredient or the other. Or not. It’s your call.
Here are my comments regarding salad dressings and cheese:
I prefer to buy my salad dressings in the refrigerated section of the grocery store. The reason they are refrigerated is because they don’t contain all the preservatives and unpronounceable ingredients. They basically contain what I would put in if I was making my own dressing. My go to brand is Lighthouse.
I find that it is really easy to just buy the blue cheese already crumbled. Less time and mess. My preferred blue cheese for salads is Stella Blue Cheese.
Enjoy this salad. It’s quick and easy to throw together, not to mention it looks and tastes great.
