Watermelon Salad

Ingredients

  • Watermelon wedge
  • Spring Mix
  • Baby Spinach
  • Balsamic Vinaigrette
  • Blue Cheese crumbles
  • Honey Roasted nuts
  • Salt & Pepper

Instructions

  • Cut watermelon in bite size pieces. Put in a container with lid. Store in fridge.
    When ready to serve:
    Mix spring mix and baby spinach in a large bowl, season lightly with salt and pepper, add balsamic vinaigrette dressing and toss to lightly coat.
    Place in serving dish. Top with watermelon pieces, scatter blue cheese and then nut pieces.
    Serve.
